EntertainmentThe sprawling 15-hectare property will have an array of steamy pools and well-appointed treatment rooms – both indoors and outdoors, set among the peninsula’s wilderness.

Big Esso, an All-Day Diner and Bar by Mabu Mabu’s Nornie Bero, Will Bring the Torres Strait to Fed Square

Food & DrinkThe owner of the snug Yarraville cafe will soon have a second, bigger platform for her Indigenous-food advocacy. “It’s going to be right in the city, it’s going to be a lot more visible to people.” Expect a strong seafood focus (with spicy pepperberry crabs and king-prawn buckets with native succulents), plus Bero wants to “make yams sexy”.

Anchovy Is Opening a Banh Mi Shop, Ca Com (Vietnamese for Anchovy), Next Door to Its Richmond Eatery

Food & DrinkThe baguette-based sandwich first debuted at Anchovy during last year's lockdown as a temporary special and then stayed on (with rotating flavours) as a Saturday-only takeaway option. But soon you can have it five days a week.

Landing Soon: Moon Cruller, Lune’s “Very Naughty, Very Rebellious Little Sibling” (With a New Specialty)

Food & DrinkLune is synonymous with croissants. And world-famous ones at that. But its new venture will orbit around crullers – deep-fried choux pastry that’s twisty and crispy on the outside, and not at all what you’d expect on the inside.

Coming Soon: Schoolhouse Studios Is Converting a Coburg Coles Into a Huge Arts Hub – With an On-Site Cafe and Bar, Creative Coolrooms, and Loading-Dock Parties

Art & DesignThe boundary-pushing, inclusive collective is fitting out the 3200-square-metre space with 52 artist studios, but expect to see glimpses of its former life. “We gave [Coles] a list of things we wanted to keep.” Plus, the community is encouraged to have its say on the plans.

Coming Soon: Melbourne Institution Flower Drum to Open a Hong Kong-Inspired Bar

Food & DrinkIt’ll be the first thing you see when you step out of the lift into the more than 40-year-old Cantonese fine diner. “The offering will be different, the drinks list will be different, the food will be more snacky and smaller” – think dumplings, spring rolls and more.

Coming Soon: Hector’s Deli 2.0 Will Bring All the Classics – Plus Fresh Turkish-Bread Sangas and Substantial Salads – to South Melbourne

Food & Drink“It’s been a long time coming,” says co-owner Dom Wilton. The tiny Richmond sandwich shop is expanding to a roomier former bakery with a Victorian frontage. Expect a slightly extended, “lightened up” menu (but that tuna melt is staying put).

Chris Lucas and Martin Benn Are Opening a Two-Level, Charcoal-Fired Japanese Diner, Yakimono, in the CBD

Food & DrinkEverything will revolve around the sprawling open kitchen, so diners will have a front-row seat to all the flame-grilling action. And it’ll be next door to the hotly anticipated Society, which is slated to open midyear. The 80 Collins behemoth just got even bigger.

Shannon Martinez and Ian Curley to Open Lona Misa, a Vegan and Vegetarian Diner in South Yarra, Next Month

Food & DrinkTwo hospitality heavyweights – behind Smith & Daughters and French Saloon, respectively – will collide at this 90-seat all-day diner within the new Ovolo hotel. The menu will draw on Martinez’s Spanish heritage and Curley’s European bistro experience. And in Martinez’s words, her usual style will be getting “a bit of [a] nip-tuck”.

Coming Soon: Melbourne Distiller Brunswick Aces Is Opening “Australia’s First Permanent Non-Alcoholic Bar” in a Nondescript Warehouse

Food & DrinkIt’ll feel exactly like a regular bar – just minus the booze. And big glass panes will let you peer into a distillery producing booze-free alternatives to gin, whisky and rum. Sample them in “complex, adult-tasting cocktails” with flame-licked rosemary, Earl Grey tea and more.
