Dine Out: Thai Nights at Waxflower

For three nights, Waxflower’s Peruvian inspired dishes are making way for a Thai menu. Expect massaman curry short ribs, paired with pineapple and saké cocktails.

Open from midday to late evening, Waxflower successfully combines elements of Melbourne cafe, European wine bar and the audiophile “listening bars” found in Tokyo and other cities. DJs play six nights a week, from Wednesday to Sunday, with no cover charges, and include such local stars as Miss Goldie, Wax’o Paradiso and Myles Mac.

Usually, the menu draws influences from Peruvian and European cuisines. But for three nights of Broadsheet’s inaugural Dine Out festival, Waxflower is going Thai. Head chef Dave Falvey previously worked with David Thompson, one of the world’s foremost experts in Thai food, and is eager to recreate some of his favourite dishes.

The menu includes braised and chargrilled short ribs in a massaman curry sauce with potatoes, and a deep-fried whole market fish with three-flavour sauce. To drink, there’ll be cocktails tailored to Thai flavours, including gin, lemon and yuzushu, and a salty pineapple, saké and sparkling coconut umeshu. Bookings are essential.
