Dine Out: The Lost Dishes at Ama Surry Hills
At their Surry Hills restaurant Ama, sisters Rowena and Kate Chansiri (Ickle Coffee) pay tribute to their maternal grandmother (ama) and her famous beef noodle soup. The official recipe was never written down before she passed away – Ama’s star dish is based on their mum’s memories of making and eating the soup as a child.
This reclamation of family history continues in Ama’s week-long special for Broadsheet’s inaugural Dine Out festival, appropriately titled The Lost Dishes. There’ll be two noodley specials on the menu: one sweet, one savoury, available exclusively as a pair for $35. The first, kanom jeen sao nam, is a salad of house-made fermented rice noodles, pineapple, garlic, ginger, dried shrimp and coconut milk. Then there’s sarim, the sweet, bright mung bean noodles topped with salted coconut milk and shredded young coconut.
Bookings are advised but not essential, available from Friday August 15 to Sunday August 17.
