Sold Out: Babs and Ester Sprits Present Fermenta!

Some of the hottest names in the inner west hospitality scene are teaming up for a one-off “fire and ferment” party.

Babs is that fling you can’t quite get over. The pop-up – run by chef Ellie Hayes O’Brien and Bec Shave – only ran on Enmore Road for a few months in 2023, but that was enough for all of us to fall in love.

Since then, Babs pop-ups have been few and far between – but as part of Dine Out, the duo is coming back to the inner west, taking over the Ester Spirits kitchen.

The theme of the dinner is fermentation-meets-fire. Hayes O’Brien will be behind the scenes while fellow chef Jae Wilkinson (Ante) presents a menu of skewered flame-grilled treats, layered with tangy, ferment-y flavours – and occasionally served with punchy pickles.

Two drinks Ester Spirits drinks are included with the ticket: a barrel-aged Martini to kick it off, plus an Alternativo, a bitter herbal aperitivo to close out the meal.
