Former Dinner by Heston chef Rosheen Kaul is one of Melbourne’s brightest new talents. After stepping away from the kitchen at Hot-Listed wine bar Etta, she’s been appearing at top restaurants up and down the east coast for short-lived pop-ups, including Kiln and Porcine.
Now she’s joining the prestigious ranks of chefs who’ve hosted sell-out events with wine label Cat Amongst the Pigeons – Matt McConnell, Victor Liong, O Tama Carey, Scott McComas-Williams and Ronith Victor Arlikatti.
As part of Broadsheet’s inaugural Dine Out festival, she’s dropping into Sydney’s elegant, beachy restaurant Table Manners, joining head chef Luke Churchill (ex-Parlar, Oncore by Clare Smyth) in the kitchen. The duo are readying to deliver a completely new menu, paired with Cat Amongst the Pigeon Wines.
After a welcome drink, the collab starts off snacky – think parfait toasts topped with lime leaf sambal and a black garlic bresaola tart. Chilled noodles arrive with abalone and black vinegar, and garlic and chive dumplings are ramped up with sobrassada butter. There are sticky beef short ribs and more for mains. Plus, a fruity tart to finish, alongside a tawny.
