The team behind Lina Rooftop and the Argentinian-inspired Evita Restaurant and Bar is bolstering its portfolio of venues with the opening of Soko Rooftop, a sky-high South American-flavoured bar and restaurant, this November.

The lavish 500-person bar by operators Ross Ledingham and David Hernandez (Evita's former head chef) will sit on the 14th floor of the $200 million Jubilee Place redevelopment on St Pauls Terrace (above the heritage-listed Jubilee Hotel). The design features an irrigated ceiling filled with greenery – inspired by the Amazon rainforest – and a Peruvian-inspired fit-out.

The high-energy spot will also have live entertainment including Latin music, bongo players and dancers.

Hernandez, who has Colombian background, has designed a menu of Peruvian-Japanese-style cooking, which will take the form of ceviche, lomito al jugo (a traditional Peruvian dish of sauteed beef, chilli and onion), yakitori, sashimi, grade 9 Wagyu served with yuzu kosho, and more.

The food will be backed by a selection of wines, sake and spirits – sitting on a seven-metre-high backbar – plus an on-theme cocktail list with 40 different Pisco Sours.

Soko Rooftop will open in November at Jubilee Place, 470 St Pauls Terrace, Fortitude Valley.
