Specialist joint Ten and Sen brings ramen from the north of Japan to Leederville.
It centres around two varieties: Hokkaido miso ramen and a signature spice ramen. Each features a rich tonkotsu broth, an original blend of miso, and a specially crafted house spice mix. With a strong focus on freshness, every bowl is gilded with a rainbow of seasonal WA produce, including lightly toasted, tempura-y broccoli, tomatoes and red onions.
The smoothness of the spicy broth hums long after you’ve left the handcrafted wooden tables, while the Hokkaido miso ramen sits in a tonkotsu and chicken-broth blend, less common than the pork-based broth tonkotsu found in most Perth ramen shops.
Accompanying it all is a selection of Hokkaido’s finest booze: reds and whites from Yoichi Winery, alongside Japanese sakés and whisky.
