Williamstown's Hellenic Hotel is undergoing an evolution. It's by Made Establishment, which until recently was fronted by celebrity chef George Calombaris, and has been in the headlines of late for staff underpayment issues (Calombaris now heads up the kitchen at Hellenic Republic Brighton ).
Now, the venue has gone in a totally new direction – away from the Mediterranean and towards South America. Hotel Argentina is presided over by Argentinian-born head chef Dan Szwarc, who's looking towards his childhood tastes and memories to inform the menu across the three venues in the building. There's main restaurant Areco, the wine-focused Bodega and upstairs is the more casual Dan's Empanada Bar.
