Andy Nguyen is firmly established in the Mildura dining scene, thanks to modern Asian eatery Andy’s Kitchen and his inaugural venture Mildura Noodle and Pasta Bar. In 2019 he set out to pay tribute to the street foods of his native Vietnam with Mr Bun Mi, its cheeky name referencing several Vietnamese favourites at once.

Centred on a spacious dining room dotted with rustic light fixtures, Mr Bun Mi aims to make Vietnamese cuisine accessible to everyone. That means maintaining the requisite authentic dishes but also offering a bit of everything across more than 100 menu items, including Aussie-style desserts and a Vietnamese-infused kids’ section. There are four distinct kinds of banh mi to try, plus spring rolls, dumplings, rice paper rolls, Vietnamese curries, rice vermicelli noodles, and of course, pho.

Uniting it all is a loose, fun vibe that encourages sharing a variety of bites amongst groups. And if you really want to get hands-on, there’s even an option to assemble rice paper rolls yourself (you can also customise your stir-fried noodles step by step). That flexibility holds true for enjoying this food at home too, with six different choices for takeaway banquets, including an impressive vegetarian selection.
