Swill
Features
Swill is just one more reason to visit rotating food truck stop Welcome to Bowen Hills.
The gin bar is in the Brisbane Showgrounds’ Sugar Building, right next to the Dairy Hall home of Welcome to Bowen Hills, and you can bring food from the food-truck park into the bar.
The exterior of the Sugar Building hasn’t changed at all but the interior has taken on a dark, Prohibition-style look. Alexander Lotersztain’s Derlot was behind the fit-out, which includes exposed columns, bright-orange booth seating and plenty of dark-blue paint.
The bar is stocked with 120 gins, plenty of which are Australian, such as Brookie’s from Byron Bay, Patient Wolf from Victoria and Mt Uncle from Queensland. There’s also a range from overseas, including Q from London, which is made using botanicals that are grown in the Royal Botanic Gardens. Customers can choose to follow the staff’s pairing suggestions or create their own.
Other than gin and tonics there are gin cocktails and gin spritzes, as well as beer on tap and a short wine list.
