Jason Barratt made a name for himself in Melbourne (Stokehouse, Hector’s Deli) before heading north to cook at Byron’s Raes on Wategos and Paper Daisy. Now he’s a born-again Queenslander, having made the move to Brisbane to run Andrew McConnell’s Supernormal and Bar Miette.

Broadsheet spoke to Barratt about the spots that have caught his eye since the move.

What’s your go-to if you want a quick takeaway dinner?
The Number One Pizze Rosse and tiramisu from Beccofino in Teneriffe. It’s become a weekly ritual – comforting and always hits the spot.

What about lunch on the go?
The fire tonkotsu from Taro’s Ramen in the CBD with a cold Suntory Premium Malts on tap.

What’s your favourite snack in your city?
The mortadella ripiena from Scugnizzi. There’s something so nostalgic and comforting about it. It’s perfect for a shared afternoon bite.

Where’s the ideal spot for a date?
Gerard’s Bistro. It’s a short walk from home and always delivers something interesting. The atmosphere strikes the perfect balance between casual and something special.

Where can you find the best coffee?
Single O in Newstead, hands down. I always go for the iced oat on tap. Its pastry game is strong too.

Do you have a go-to for a long lunch? What are you ordering?
Florence in Camp Hill. It leans more to brunch than lunch, but it’s a place we keep going back to. I usually go for whatever’s new on the specials board, then grab a few pastries to take home.

How about a meal with a big group of family or friends?
When I visit family and friends in Melbourne, I’ll always visit France-Soir. It’s been a long-time favourite – great energy, classic food, and it just works so well for a lively group.

What’s your bucket-list restaurant?
Le Doyenne in Saint-Vrain, France.

If you’re after something sweet, where are you heading and what are you getting?
The dark chocolate and wattleseed cookie from Agnes Bakery. I grab one anytime I’m near James Street.

Is there a hidden gem that you think is great?
The Peking duck at Billy’s Pine and Bamboo in Cannon Hill. I’m still new to Brisbane, but this place has been a standout.

What is your favourite dish on the menu at Bar Miette and Supernormal and why?
At Bar Miette, it’s the weekend grill. It’s a great reflection of how the space transforms over the weekend and adds a bit of atmosphere to the venue. Also, Bar Miette’s Monday night Wagyu burger and fries is hard to pass up!

At Supernormal, I’m loving our Sunday lunch bo ssam with Wagyu short rib. It’s generous, hands-on, and perfect to share with friends.

Tell us about a local producer you can’t stop thinking about?
Big Heart Bamboo in the Noosa hinterland. Its young bamboo hearts are incredible. When they’re in season, we preserve as much as we can for the Supernormal menu. Can’t get enough of them.
