Singapore Social Pop-Up
Singapore cocktail bars Native and Operation Dagger are coming to Australia to give Sydneysiders a taste of the island city's nightlife. Both bars have made it into the top 25 of the World’s 50 Best Bars list with their inventive and unexpected drinks. Don't be surprised if freeze-dried ants, fermented grasshoppers or pork soda make their way into your cocktail.
For dinner, Sashi Cheliah – winner of MasterChef 2018 – has created a menu of Singaporean street food that combines Indian, Chinese and Malaysian cooking styles. His dishes will be served both à la carte and in a five-course degustation with cocktails. There’ll be chilli crab sliders, crispy-skin pork with sweet and sour sauce, and Cheliah’s signature chicken rendang wrapped in delicate, lace-like roti jala with pineapple cucumber achar (pickles).
Live music will be provided by DJ KoFlow and R&B singer Tabitha Nauser.
Reservations are only necessary for the degustation menu.
