Richard Price, head chef at Petersham pub Oxford Tavern developed a taste for American barbeque on a trip through Texas in 2017. It was this influence that led to signature dishes such as The Houston Hustle, a cheeseburger with 12-hour-smoked brisket stacked on a classic beef patty.
