Get $5 Baos at Madame Hanoi’s New Bao Bar

Pillowy steamed buns packed with crispy pork belly, Wagyu beef cheek, chilli prawn or braised lamb shanks. Plus crispy okra and soy-glazed eggplant in a matcha bun, and a fried dessert bao with pandan vanilla ice-cream and coconut sauce.

When you need a quick bite on a budget, baos are hard to beat. Doubly so during festival season, when many of us are spending all our pennies on shows. So Madame Hanoi will be running a bao bar dedicated to the pillowy steamed buns every Friday from February 21 to April 24. From 5pm to 7pm, head chef Raj Kumar will serve up eight different bao combos for just $5 apiece.

Meat options include crispy pork belly with hoisin sauce and chilli mayo; Wagyu beef cheek with pickled white cabbage, papaya and eggplant mayo; and chilli prawn with spring onion and chilli jam in a charcoal bun. Plant-based options include spicy tofu with pickled carrot, daikon and yuzu mayo, and crispy okra with soy-glazed eggplant and spicy miso in a matcha bun. If you’re still not done, there’s a fried dessert bao filled with pandan vanilla ice-cream, caramel popcorn, raspberry candy and coconut sauce.

There’ll also be tap beers and wines for $8, including Unico Zelo’s Harvest Blanc de Blancs and drops from French producers Hugel Gentil and Georges Duboeuf.
