That’s the day Sydney’s favourite burger outlet, Mary’s will hit Melbourne for the first time.

Like at recent burger pop-ups, there will be queuing. The Mary’s crew will serve just 300 customers at Belle’s Hot Chicken before it packs up and disappears home. There’s no booking or pre-ordering.

“When we run out, we run out,” says Mary’s co-owner, Jake Smyth. He’s a long-time friend of Morgan McGlone, the co-owner of Belle’s. He says the pop-up was hatched after a night spent drinking together. “But he totally called us on it the next day,” Smyth says. “He said, ‘You guys are actually coming down, aren’t you?’”

Like Brother Burger, Andrew’s Hamburgers and Huxtaburger here, Mary’s is the stuff of legend up north. That’s thanks to its beef patties (two parts chuck, one part brisket, one part rump) and “trashcan bacon” (bacon smoked in a clean garbage can). The store recently opened a second location in Sydney’s CBD to keep up with demand.

Smyth says the pop-up will serve all three of its usual burgers, with no limits on extra patties. There’s the Mary’s Burger (beef, cheese, lettuce, tomato, onion, Mary’s sauce), the Cheez (beef, cheese, pickles, onion, ketchup, mustard) and a confit field mushroom burger with lettuce, cheese, onion and Mary’s sauce.

Mary’s Burgers will pop up on May 24 from 4pm.
