The Trustee Bar & Bistro is one of the most-loved venues on St Georges Terrace, no mean feat given the competition. It comes down to the passion of owners Scott and Angie Taylor (Beaufort Local, Angels Cut) two siblings who leapt head-first into the hospitality game.

As the name suggests, the property once housed legal practitioners and stacks of paperwork. Today there’s a tangible buzz of conversation and enthusiasm from staff and patrons alike. The only papers being exchanged are impressive menus.

Food swings between European and Australian. Those who fear the combination of cheese and seafood will be converted after they try the prawn linguini with blue cheese. The pork-belly parcel showcases technique. Seafood purists will enjoy the succulent claws and tail of a WA marron. And sweet tooths needn't bother with savouries – the five-course dessert degustation is only $24.

The wine list is extensive, drawing on Scott’s expertise. On the off chance nothing on the menu takes your fancy, you can ask for something from his personal cellar. Be prepared to dig deep into your pockets, though.
