We ventured out to unearth a professional cocktail recipe that you can easily make at home. What we found is a drink that puts a modern twist on an English classic – the Pimm’s Cup. Perfect for mass-producing over a warm weekend, this spice-influence, jazzed-up recipe is just what we were looking for.

Hercules Morse’s Apple Spiced Pimm's & Dry.

• 45ml Pimm's
• 30ml Hendricks Gin
• 10ml apple juice
• 15ml spice syrup*
• Schweppes dry ginger ale
• Ice

Method:
Pour the Pimm's, gin, juice and syrup into a cocktail shaker along with ice. Shake until cold, then pour over a glass filled with ice and top with Schweppes dry ginger ale. Garnish with any fruit – think apple and orange wedges, or anything you have lying around.

*Recipe for syrup

• 1 1/2 cups water
• 2 cinnamon sticks, broken up
• 6 whole cloves
• 2 star anise
• 3 all spice berries

• 1 cardamom pod
• 6 black pepper corns
• 1/8 tsp chilli flakes
• 1 cup sugar

Method:
Bring water to boil, add spices. Boil for five minutes, then add sugar and stir to dissolve. When sufficiently cooled, strain and pour into sterilised bottles. Store in fridge.
