The refurbishment has put a contemporary spin on its classically luxe one- and two-bedroom apartment-style suites.

With views like those at the Pullman Quay Grand Sydney Harbour, you’d forgive the hotel for resting on its laurels and offering no-frills rooms and facilities. Book a harbourfront room, and you’ll see Circular Quay stretched out before you: iconic green-and-cream ferries looping in and out of the terminal, the historic buildings of The Rocks jostling for space, and the Sydney Harbour Bridge in all its majesty hovering over the harbour. On the other side of the hotel, the garden-view rooms offer the lush scenery of the Royal Botanic Garden.

The luxe rooms, though, more than match their accompanying views – and offer an oasis away from the bustling hordes of visitors that clog the streets and footpaths below. And they’ve just been given a zhush. Pullman has worked with Brisbane interior design studio Mel Porter Design to add a little sparkle to the spacious one- and two-bedroom suites, all of which have roomy bathrooms, kitted-out kitchens and plush lounge areas.

Beautiful new contemporary artworks have been hung on the walls, while fresh custom furniture (including enormously comfortable lounges) fill the rooms, and bold statement lights are artworks all on their own. It all sticks to a monochromatic colour palette, letting the harbour that lies on the hotel’s doorstep do the talking. One thing that hasn’t changed? The luxuriously deep corner spa baths – though they’ve been installed with new modern fixtures.

The hotel’s good-times bar and diner Hyde Hacienda has also had a bit of a glow-up of its own, with a new South American-inspired menu. It’s chock-full of drinking-friendly dishes such as salmon ceviche with avocado and lime dressing, tender grilled octopus skewers and a generous pulled-beef quesadilla that’s a filling cornucopia of cheese and sour cream.

Twelve new cocktails have been introduced to the menu as well, including a zippy jalapeno-infused Margarita, a rum-based mango number with a spicy hit of tabasco, and the Flaming Sailor – as its name suggests, it arrives on fire, and is made with spiced rum, mango nectar, lime juice and passionfruit. Like the harbourfront rooms, the bar has outstanding views of the harbour, and is the perfect spot to hole up and watch as the sun sets and the city lights up. Or, order cocktails and food through room service and park up on your balcony, perched high above the buzz of Circular Quay.
