Cousins Alessandro Riillo, Alessandro Ranieri and Luigi Ranieri wanted to bring a slice of their shared childhoods in Italy to Sydney. Cue this hole-in-the-wall sandwich vendor in Surry Hills, named for their grandfather Luigi and inspired by the panini shops of Napoli and Calabria.
The 11 staples take after regions in Italy. The Sicilia, for example, packs in mortadella, stracciatella, house-made pistachio pesto, pistachio crumbs and rocket. Meanwhile, the Calabria brings the heat with salami, ricotta, olives, semi-dried tomatoes and rocket.
Specialty ciabatta loaves are prepared to house specs by Brickfields. They’re soft inside but crusty and sturdy outside, preventing soggy rolls and allowing for daily consumption as opposed to heavier breads like focaccia.
