AP Supply is the younger sibling to AP Bakery. It has all the familiar favourites you might’ve queued for – like Aleppo scrolls, bright pastries, pies, and sesame and fenugreek loaves. Plus, here you’ll find some exclusive menu items.
That includes cream puffs inspired by its owners’ trips to Japan. The golden orbs are as plump as they come. There’s dark chocolate-on-chocolate number, plus Chantilly and cumquat, salted pistachio and a white chocolate one with a zesty lemon cut-through.
There are also one-off sourdough lines, “interesting” wholewheat bread and panettone. Croissants that don’t live up to the standards are toasted in anglaise, for a “malty, croissant-y” soft-serve that’s swirled into an opened choux. It’s topped with salted caramel and a special sesame-seed and croissant crunch for a new heavy-hitter in the sweet sanga game. You can also get that ice-cream topped with espresso.
The team behind it – which includes Jin Ng (Golden Age Cinema & Bar, Paramount House Hotel), Russell Beard (Reuben Hills, Paramount Coffee Project) and Mat Lindsay (Poly, Ester) – are some of Sydney’s most respected hospitality figures. Then there’s head baker Dougal Muffet (ex-Ester and Moonacres Kitchen, Southern Highlands), who’s a major proponent for using heirloom Australian wheat varieties grown with sustainable farming practices.
