No Robs were involved in the making of Eat at Robs. It actually stands for “Rozelle’s Original Burgers” – a name that owner Michael Carter and his wife thought hearkened back to the old-school days of American burgers. Back when they were just meat and cheese in a potato bun, maybe with some onions and pickles.
Carter started Robs as a market stall in 2018, after a chance encounter with one of burger legend George Motz's famous cheeseburgers. Motz is renowned for his historically accurate smash burgers – a style that Carter resolved to bring back to Australia. In 2021, he bought his local butcher Darling Street Meats. He continues to run the butcher, and he put Eat at Robs, a takeaway-only burger spot, at the front counter. Eat at Robs gets all its meat from the butcher out back, and uses it for a concise menu of faithful smash burgers.
The specialty here is Oklahoma smash burgers, which use liberal amounts of grilled onion, smashed into the patty. The bestseller is the Double Original, but the Fancy, which comes with lettuce and “Robs sauce”, has its own dedicated legion of fans. You might want to order ahead – because everyone wants to eat at Robs.
