If bistros are like the pubs of France, then Chez Blue is a Parisian dream for Rozelle. The Sackville Hotel’s casual French diner lives inside the pub’s former gaming room, which has been transformed with mosaic flooring, an adjoining cocktail bar and lighting sourced directly from a vintage market in Paris.
On the menu is a roll-call of bistro classics. Niçoise is reimagined as a fresh tartare, with green beans, eggs and slices of raw tuna dressed in tomato vinaigrette, topped with a golden potato galette. Larger plates include steak frites with NSW-raised, grass-fed sirloin drenched in a golden bearnaise and stacked with French fries.
The drinks program is equally Frenchie, with plenty of drops from the country’s top wine regions. We love the trio of mini Martinis, including a buttery ‘croissant washed” number made with Four Pillars gin, vermouth and spiced oil.
