The emporium of Chinese delights that is Xi'an is the definition of no frills; a perfect storm of ancient menus, no-nonsense staff and an extensive selection of dishes around the $10 mark. Think sliced pig ears, cucumber with garlic sauce and even sauteed tripe.

As for what to order, it all depends on the season. In winter, the pork pita bread – a deliciously fatty and chewy bread roll filled with pork and capsicum – is unmissable. During the warmer months, you might get refreshingly cold knife-sliced noodles with chilli, cucumber and vegetables.
