Stanton & Co is a casual fine diner by The Parlour Group (Riley Street Garage, Surly’s, The Village Inn) in The Cannery complex.

At the helm is group executive chef Regan Porteous (Toko(/melbourne/restaurants/toko-melbourne), Riley Street Garage). The menu consists of classic dishes elevated with a Japanese play on things, and there is some cross over between this menu and that at Riley Street. Its smoky soy truffle oysters, crisp pork knuckle and truffled potato mash make an appearance at Stanton & Co.

A dish of hand-stretched burrata is served with pickled onions and a roasted parmesan and pistachio furikake (a sesame and seaweed seasoning). There’s also a dish of pecorino, mozzarella and ricotta-stuffed gyoza served with simple mustard vinegar. And a plate of mussels, pipis and clams with dashi broth and turmeric butter.

Alongside a wine list highlighting Australian, Italian, French and Argentinean drops, the drinks menu focuses on celebrating the venue’s neighbours. There’s beer from nearby microbrewery Frenchie’s Bistro and Brewery, and you’ll find Archie Rose dry gin in a cocktail of elderflower, rosè vermouth and hibiscus that’s designed to reflect the gardens in the local area.

The venue has 240 seats, but deep, earthen tones and soft furnishings help the space feel intimate and luxurious. Grab a seat at one of the gently worn dark olive banquettes in the dining room that look out onto a generous deck outside, or at the marble-topped chef’s table by the open kitchen.
