Chef Jack New (Cafe Sydney, Sokyo, Ananas, Edition Roasters) is behind Maslow’s at its permanent Naremburn location (it was previously a pop-up in Pymble), with Tom Riddell looking after coffee. This bigger site hosts well-known favourites from the Pymble menu: lavender panna cotta, maple muesli, honey jelly and smoke; Smoke on the Water, which is cherry wood salmon, beetroot-cured egg, chorizo oil and toast; and the Mr Pig, a brioche bun of braised pork and 62-degree poached Onsen egg.

Coffee is by Sweden’s Drop Coffee as well as Seven Seeds, but will also feature guest roasters. Artwork in the space is no afterthought. It will be updated to complement the seasonal menu. End-of-season dinners will see previous artwork for sale when the chef introduces the new menu along with the new artist. A liquor license and dinners will come soon.
