The Collaroy Hotel
Fish-print bar stools and vintage Hawaiian posters frame the beach-long views from the upstairs bistro at The Collaroy Hotel. Fishermen’s rope grids the glass ceilings and the afternoon rays illuminate the grey ironbark timber and brushed-brass light fittings. To complete the clubhouse aura, the coloured caps of local surf lifesaving teams are on display along the staircase.
Head chef Ben Varela dishes up barramundi fish tacos with chipotle sauce as the perfect chaser for the seared sesame tuna with ponzu mayo and wasabi pea dust. The seafood theme spreads from tempura rock prawns to chilli spanner crab linguini. For a meaty alternative a list of cuts ‘From The Paddock’ is on offer. Our pick is the scotch fillet with chimmi churri, and of course, the famous waffle fries.
A local Pinot Grigio from the Italian Boys is on the wine list, with many other cocktails and carafes to share, and 14 beers on tap. For a balmy night, don’t go past Roy’s famous homemade syrups to mix with Ketel One Vodka – we made a beeline for the lemongrass, chilli and coconut flesh concoction.
