In the restaurant business, collaboration is key, as restaurateurs Julian Marchetto and Nathan Moses of Darlinghurst’s Foley Lane know. The pair transformed Foley Lane from a Spanish tapas bar to an Italian restaurant called Casoni, with chef Lachlan Robinson (previously of Melbourne’s Mister Bianco and Pendolino) leading the kitchen.
A new pasta dish is available every single week. So far there's been goat’s cheese and basil agnolotti with tomato sugo and fried capers; and pumpkin and ricotta ravioli with pistachios, burnt butter and sage sauce. It's a test of Robinson's creativity, and he comes up trumps.
On the drinks side, Negronis, Aperol spritzes, and Peroni beer are available on tap, alongside a selection of Italian craft beers behind the bar.
