Bar Patron

Bar Patron is the antithesis of heavy, Tex-Mex food. It’s all about proper Mexican dishes highlighting the freshness of the cuisine through the acidity of lime, the flavour of coriander and plenty of herbs.

The kitchen sends out house-pressed tortillas wrapped around eastern rock lobster, tequila-cooked chicken, pork carnitas or chargrilled steak – all served with house-made sauces and salsas. You might also see scallop ceviche, tempura soft-shell crab, beef empanadas and barbacoa lamb shoulder cooked over coal. Fresh seafood is brought in daily.

As of 2022, the venue is a collaboration between Pacific Concepts (Fratelli Fresh, El Camino Cantina, Winghaus) and tequila brand Patron. So naturally, there’s a big focus on the agave-based spirit.

Expect rare and limited-edition tequilas, plus cocktails made with a good hit of Patron. But the most famous drink here is the $100 Millionaire’s Margarita. Made tableside, it features Patron Gran Burdeo Extra Anejo, Grand Marnier Cuvee de Cent Cinquantenaire, Remy Martin Louis XIII, fresh-pressed agave nectar, lime juice and an ice sphere topped with gold leaf.

The venue captures the relaxed vibrancy of a Mexican hacienda. A Carrara marble bar runs the length of the window, so pull up a leather stool and take in the views of Sydney Harbour and Circular Quay.
