He’s back in Surry Hills with Baccomatto Osteria, attached to the Cambridge Hotel. The aim is to make sure that hotel patrons and passersby, can get prosciutto and salami and cheeses, whenever the mood strikes. And the pick of the menu? Marcucci recommends everything but he concedes that the homemade pasta is hard to beat.
