When A.P Bakery – the collaboration between the teams behind Paramount House Hotel, Poly/Ester and Reuben Hills – opened on top of Paramount House in 2022, it introduced Sydney to the Aleppo pepper scroll, a flaky, cheesy little pastry the city didn’t know it needed.

Now the team is serving their exceptional baked goods at A.P Town, a tiny Newtown outpost inside a red-brick building on Bucknell Street. With only a couple seats inside, it's mainly geared towards takeaway. Also, it's proven so popular that items tend to sell out by lunchtime.

If you manage to get down early, chances are you'll find pastrami pies, plus others filled with pork belly or Warrigal greens. There’s also a cheese toastie filled with tomato, mustard, gruyere, asiago and cheddar; and Aleppo and chickpea soup served with an A.P buttered baguette.

To drink, it’s Reuben Hills coffee, sodas by Strangelove and teas by Teacraft.
