Buen Taco is a playful late-night pop-up taqueria by Quick Brown Fox Eatery in Pyrmont, which opening during Sydney’s second lockdown as a takeaway-only joint. It’s since become a permanent fixture on Union Street that’s open for dine in, with live DJs spinning every Friday and Saturday.
It serves four types of tacos from Wednesday, including a succulent birria taco crammed with slow-cooked shredded beef, queso asadero (cheese), onion and coriander. It’s made even better with a dipping sauce made from the juices of the slow-cooked meat, combined with three kinds of smoked Mexican chilli – chipotle, pasilla and arbol.
Another option might be carnitas, served on a blue-corn tortilla and stuffed with pulled-pork shoulder that’s coated in a house-made rub and slow-cooked for 12 hours. Tacos come in serves of three, but you can (and should) add a spiced-apple enchilada drizzled with mole chocolate sauce and a frozen Margarita or Jarritos soda to your order.
