Nick Hildebrandt and Brent Savage – the pair who brought us the much loved Bentley Restaurant & Bar – are at it again, this time stamping their brand of cool onto Monopole in Potts Point. The boys have added restaurant manager and sommelier Glen Goodwin to the ownership team and reworked the spot on Macleay Street that once housed Sailors Thai. It’s all about share plates and an excellent drinks list at this contemporary Australian eatery.
They’ve been busy since opening, with locals keen to see how the renovations would turn out. And feedback on fit-out and design were unanimous. Under the direction of architect Pascal Gomes-McNabb (who also worked her magic when fitting out Bentley), that’s little surprise. The wine list doesn’t disappoint either, with over 500 boutique and more obscure options, including a wide variety by the glass.
Their house-made charcuterie, which has been in the works for the last two months, is a highlight.
Developing Monopole has been a labour of love for the team. It was no quick process, with a bit of a diversion from the original plan. In the end, the final concept suits the neighbourhood. We reckon Potts Point locals will agree.
