When Greg Bampton and Phil Stenvall opened Bar Suze in 2021, the idea was to follow the hyper-seasonal path of European wine bars like Le Chateaubriand in Paris. But punters saw it more like a full fledged restaurant, so the concept quickly changed. Suze has since closed (with BS Pasta Palace in its place), and Bampton and Stenvall have given the Parisian concept another shot in Potts Point with Caravin.

With just 24 seats, the two-level art deco space allows the team the freedom to create on the fly. And while Bar Suze honoured Stenvall’s Swedish heritage, Caravin's menu leans French with a twist. A tartare of smoked beetroot is served with wasabi and pomme gaufrettes; caramelised scallops come with a vichyssoise of artichokes.

Bampton’s wine list has a heavy focus on naturals, but because the Potts Point crowd differs from that in Surry Hills, Bampton has balanced it with plenty of traditional drops. Whatever you’re in the mood for, the 50-strong selection is constantly changing, so there’s always something new to sip on your next visit.
