Charlie and Loretta Svenson have been making wine for 20 years, the last 11 of them at De Salis. That experience shows. The winemaking here is modern, with a focus on minimal intervention and natural fermentation.

De Salis is over 1000 metres above sea level, which is ideal for producing sparkling wine. The higher altitude leads to more acidity, which makes for an easier-drinking sparkling wine. The Blanc de Blanc, Lofty Cuvée and sparkling rosé are all worth trying.

The property has sweeping views of Orange, and sitting on the deck around the barrels is a breezy way to spend an afternoon in the sun. You’ll likely have Tank the dog snoozing at your feet, and inside the cellar door hang hand-painted canvasses from an early 20th-century travelling theatre group.

De Salis hosts a number of events, including Vegan in the Vines. But if it’s a tasting you’re after, you’ll have a great time chatting with the vignerons, no matter your level of wine knowledge – the whole Svenson family is involved in the operation.
