In 2019, two coffee veterans opened Comoros Coffee in a bright and airy space in rapidly evolving Mascot, bringing speciality brews to this south-eastern corner of the city for the first time.
Prior to that, Nathan Devlin and Sam Crawford worked together for more than 15 years, establishing (and subsequently selling) the North Sydney cafe favourite Bay Ten Espresso before entering the cold-brew wholesale business with Coal Coffee, which serviced the Sutherland Shire and NSW South Coast.
They chose Mascot for Comoros after noticing all the apartments springing up near the airport.
Devlin and Crawford decided to keep things simple: there’s espresso from Seven Miles plus cold brew and nitro (cold-brew coffee infused with nitrogen gas) coffee made in-house. A rotating black-coffee menu shows off the pair’s other favourite roasters. Crawford says the nitro, which looks a little like Guinness and has a creamier mouth feel than cold brew, has been an immediate hit with locals.
The bagels, from Woolloomooloo’s Smoking Gun, come with shmears and breakfast spreads, plus there are three options available for lunch: tomato, basil and feta; salmon; and pastrami. A simple selection of pastries is from various local bakeries. The Coal Coffee cold-brew wholesale business will also continue under the Comoros banner.
The high-ceilinged cafe space is decked out with Australian hardwood furniture, indoor plants and a selection of local artwork. Importantly, it’s just blocks from the airport and has street parking, making it a viable option for those with time to kill before a flight.
