Built into the foyer space of the newly refurbished Paramount House is the Paramount Coffee Project, a cafe collaboration between Reuben Hills’ Russell Beard and Mark Dundon of Melbourne’s Seven Seeds. The once empty, dark atrium of the art deco building has been opened up and filled with brilliant natural light – a signal of the building’s exciting new creative and commercial re-imagining.
Both Beard and Dundon admit they know quite a bit about coffee, but also that “there’s more and more to learn”. Motivated by their own curiosity and appetite for experimentation, PCP will rotate new beans and new roasters from around the world every four to six weeks. As a part of the project, featured green beans will be sent out to local roasters, with their individual interpretations being served at PCP’s brewing bar – a multi-roaster showcase meaning you no longer have to pick a side. The September menu features a single estate bean from La Plata in Columbia, with filter roasts by Mecca and Cup Coffee and espresso roasts by Seven Seeds and Reuben Hills.
Like the Reuben Hills space on Albion Street, the cafe at Paramount House is architecturally striking, with high ceilings, polished concrete, white subway tiles and timber benches among accents of elegant black. The food on offer is American-inspired but matches the space and coffee for its sophistication. There is Brickfield’s best sourdough with Reese’s Peanut Butter, house jam or vegemite and a specialty waffle with fried egg, guacamole, maple bacon and pico de gallo.
