With temperatures reaching close to 40 degrees already this season, Waterman’s Lobster Co. has the right idea. The lobster-centric Potts Point eatery will be at the beach for a three-month pop-up.
“It’s the same experience as Potts Point, without a strong separation between inside and out,” says co-owner (with Tristan Blair and Nate Hatwell) Matt Swieboda. “It’ll have a slightly different feel, but it’ll still feel beachy.”
The pop-up will be at Bondi from Boxing Day onwards, with an altered menu, “Tailoring the experience to the Bondi people a little more,” says Swieboda. The team will serve its signature lobster and fish rolls; a pastrami and eel cream roll; a Bondi-only fish roll with house-made tartar; seafood share-plates (smoked trout pate, kingfish tartare, and school prawns with a lime aioli); and sides and salads. There will be cold-pressed juices and other non-alcoholic beverages, such as root-beer floats and grapefruit tonics. Young Henrys will be on tap, and there will be an extensive wine list.
While the menu, and team’s vision, focuses on the takeaway vibe of New England crab shacks, the space – previously Mr Moustache – will remain a functional restaurant with bi-fold doors, neon signage and 50 seats.
“It’s finally an opportunity for us to take Waterman’s back to the way we always saw it,” Swieboda says. “We want to do really fun, easy, affordable beach concepts as close to the water as we can.”
The Waterman’s Lobster Co. pop-up restaurant opens Boxing Day and will be open daily until March for lunch and dinner except on Christmas Eve, Christmas Day and New Year’s Eve.
