Waterloo’s Danks Street has undergone a major reshuffle of late, including newcomers like 3TO7, a narrow industrial exhibition space that opened earlier this month, serving all-day brunch and converting to an elegant wine bar at night.
“The space used to be an art gallery run by a friend of Ashleigh’s,” says Petr Dvoracek (former mixologist with Merivale Group) who co-founded 3TO7 with Ashleigh Howe. When the space became available last December, Howe saw potential, but the team left it for a couple of months to work on other projects.
DesignAFlora is 3TO7’s debut exhibition and features the collaborative works of six Sydney floral artists. On display until September, these vivid floral pieces explore the parallels between art and nature.
“We wanted to keep the art gallery feel of the space,” says Dvoracek. “For our upcoming installations, we have a few ideas in mind, like street art and cartoons, film and architecture. We want to keep it fresh and change it every four to six weeks.”
The New York-inspired brunch menu delivers dishes that also feature as part of the chef’s brunch tasting plate, served in two platters – savoury and sweet. Start with house-made baked beans with pork sausage, served with carrot and coriander relish, or the roast pumpkin with chickpeas, cumin and smoked goat’s cheese next to scrambled eggs. Sweets include arabesque pancakes with salted caramel, fried banana, thyme and orange clotted cream, and house-made crumpets with organic honey and vanilla yoghurt. Coffee here is full-bodied and rich, thanks to Bay Coffee, a speciality roaster in Neutral Bay.
After dark, look out for the red neon sign outside and expect charcuterie plates, smoked chicken terrine with tomato chutney and baked brie with port reduction and basil alongside the handpicked wine list.
