Reuben Republic started selling their sandwiches a year ago at weekly markets such as Double Bay, Rozelle and Frenchs Forest. Word spread and they gained quite a following. Soon you’ll be able to tuck into one of their Reubens or a classic pastrami sandwich any day of the week when they open their first permanent shop on July 10 on Marrickville Road.
The people behind the Republic take pride in their methods: their brisket is smoked for 16–18 hours and cured for one month. Crispy pork is slow-cooked sous vide style for 72 hours. All ingredients are made in-house and toppings are traditional – sauerkraut, Swiss cheese, Russian dressing and pickles on the side.
