Cooking for the people you care about can be a supreme act of love – one that surpasses bunches of flowers, boxes of chocolates and awkward dates on Valentine’s Day.
“When you cook for someone else it comes from your heart,” says Lilly Fasan, executive chef at The Greens of North Sydney where she works alongside her husband, Nathan. “It’s nice to give someone a good meal to eat.”
But that doesn’t mean it has to be complex or extravagant. Or keep you in the kitchen all night.
“It’s great if it’s simple and tasty to make so you can spend some more quality time with your loved ones,” she says.
With that in mind, Fasan has shared her recipe for honey- and spice-roasted peaches – currently on the menu at The Greens. But in this version the chef has made a few small changes so you can get out of the kitchen and enjoy Valentine’s Day with the people who really matter.
“I love peaches and I just think they’re really good for Valentine’s,” says Fasan. “We serve them with an Earl Grey ice cream (made in house) which is great, but peaches also work well with vanilla and at home you don’t necessarily have an ice-cream machine,” she says. So to keep it really simple, in this version you don’t need to make the ice cream or the biscuit crumbs, but do choose quality ingredients.
“I think it’s nice to cook whatever you can manage, but a bit of sweetness is really good.”
The Greens Honey- and Spice-Roasted Peaches with Vanilla Ice cream and Biscuit Crumbs
3 ripe but still-firm peaches
1 small pack of quality shortbread (e.g. Walker’s)
2 tbsp butter
1 tbsp brown sugar
1 tbsp honey
300g quality vanilla ice cream
Preheat oven to 160°C.
Slice the peaches in half and discard the pips. Place the peaches in a deep baking dish. Melt the butter in a saucepan or microwave. Drizzle the melted butter over the peaches and then sprinkle with sugar. Cover the dish with foil and place in the oven for 15 minutes.
While the peaches are baking, crush the shortbread biscuits on a board into crumbs.
To serve, place the biscuit crumbs on a plate, then place the warm peaches on top of the crumbs. Add a scoop of vanilla ice cream and then drizzle the remaining juice from the peaches around the plate. Finish with a swirl of honey on top.
