After its experimental BRGRS menu at the Macquarie Hotel reached cult status, Pub Life Kitchen relocated to Ultimo’s historic Lord Wolseley Hotel in 2014. After a pop-up at Deus ex Machina that pulled regular queues, it is now bringing its burgers to Rozelle’s Ruby L’otel.

The team isn’t reinventing the food wheel, just providing high quality produce, cooked like your ma would, says PLK owner Jovan Curic.

“We’re going back to the crux of what PLK started at the Mac Hotel,” Curic says.

Unlike its predecessors, PLK’s Ruby L’otel menu doesn’t feature a heavy burger contingent, but devotees will still be able to get their fix on Fridays with a rotating burger menu a la Mac Hotel. Vegetarian menu highlights include pumpkin and walnut tortellini with sage and burnt butter.

Locals will be pleased to hear there are bistro specials on each night of the week, including Chicken Dinner Thursdays; order a whole bird and get unlimited sides for an extra $4.

“The whole idea is you can get a whole chook with your friends and just load the table up. It’s more of a family-dinner vibe rather than eating out at a restaurant.”

Like any of Curic’s ventures (he is still hosting seasons one and two of TV series Foraged), provenance is key. Organic Canadian Speckle Park beef is sourced from Orangeville Meat Co. on the outskirts of Camden. Try it in braised beef cheeks with truffled potato puree and Serrano ham, or falling off the bone as brisket, cooked outside on the spit.

“We’re going to be doing whole beasts every weekend. A whole pig or a whole lamb or duck.”

ParkMeats will happen each Sunday, as PLK spills out into the sunshine and onto the adjoining neighbourhood park. Just order a picnic pack from the kitchen, and BYO picnic rug, bib and mates.
