During the week-long Chinese New Year celebrations, households keep their tables laden with sweet and savoury festive treats to offer family and friends. Another prerequisite is the "tray of togetherness", a tray or special box filled with an assortment of auspicious treats. Among the more popular treats are sweetened lotus roots (symbolising abundance), sweetened lotus seeds (suggesting fertility), dried melon seeds (symbolising profuse earnings), and all kinds of candies, to provide long-term sweetness of life.

This prawn toast is a Spice Temple savoury snack. Here’s the recipe to try this weekend.

Ingredients
250g cleaned and minced raw prawn meat
7g or 1 small knob grated ginger
2 egg whites

Seasoning:
1 tsp white sugar
2 tsp light soy
1 tsp sesame oil
1 tbsp shallots cut into rounds

Fresh white sandwich bread (Tip Top or similar)
White sesame seeds
Vegetable oil for frying

Method
Mix together the prawn meat and the grated ginger. Whisk the egg whites to soft peaks and fold through the prawn mixture and seasoning. Cool in the fridge. Remove the crusts from the bread and smear a thin layer of the prawn mixture onto the bread and refrigerate. Repeat with all remaining prawn mixture. When they are cold, cut them into triangles and place onto a tray individually, and sprinkle the toasts with the sesame seeds. Heat the vegetable oil to 170 degrees Celsius and begin to fry the toasts until golden (about 2–3 minutes) turning them for even colour. Remove from the oil and place onto absorbent paper. Serve immediately with your choice of dipping sauce or plain.
