A sunny oasis, surrounded by palm trees and harbour views, where granddad can have a bowl next door. Welcome to The Greens, where husband-and-wife team Lilly and Nathan Fasan (previously from The Grounds of Alexandria) have reworked a daggy pub into a sleek summer haven.

Lilly describes the mammoth project as, “Rejuvenating something old and bringing it back to life.” The once dank pub is unrecognisable; the new bright, spacious layout provides ample room for bowlers and diners alike. Huge vintage photographs bring character to the interior, while an enormous, rustic garden invites relaxation with recycled brick and mismatched tables. Construction has pricked the curiosity of those passing through the neighbouring park. Nathan is unsurprised by people peeping over the fence, the unanimous local response is, “oh yes, finally something is happening.”

The menu focuses on sharing. Small plates provide taste tests, particularly wood-roasted bull-horn peppers, oxtail croquettes and heirloom tomatoes. Mains include a wagyu beef burger or a whole baked snapper for two. Substantial salads will appease the health conscious, but a safer bet is the succulent lamb spit roast. Lilly’s homemade chutneys and jams are available beside the barista bar, where an exclusive blend is supplied by Marrickville’s Double Roasters.

Bar Manager Matt Le Rade has created boozy delights at The Roosevelt, Pelicano and Palmer & Co. For The Greens, Le Rade wanted to, “Have a bit of fun with the cocktail list. I wanted to make them approachable and fun,” he says. The Salted Cuba Libre, of Le Rade’s own concoction, is a standout; punchy blended rum is counteracted by a house-made salted cola syrup. Sharing cocktails (strong enough for four) arrive in whole coconuts, pineapples and watermelons. These novelty vessels don’t take summer too seriously.

As The Greens gets into full swing the manicured turf will host yoga-on-the-green mornings (accompanied by the upcoming breakfast menu) and screen-on-the-green nights on Thursdays. For avid bowlers, the lawns next door are still operational. And thanks to this new neighbouring eatery, other bowling clubs are turning green with envy.
