The story behind Happy as Larry is: three guys sought to create a food truck that would not only change the food-truck game, but also provide Sydney with authentic Napoli pizza. They thought through all the details that would make their vision a reality, and they nailed it.
The truck, painted in navy blue, is an impressive beast to take in. It measures 9-metres long, 3.6-metres high and is built from a converted shipping container using recycled materials. It has a fully equipped commercial kitchen and a 2.2-tonne, hand-built, custom, wood-fired oven from Naples.
Oh, and neon lights and an integrated sound system. “We want to engage people on multiple levels,” co-owner Adam Choker explains. “We’re not just selling pizzas. We want everyone to have the Happy as Larry experience.”
Head chef Anthony Severino studied in Italy under some of the world’s most talented chefs and pizziolos, which means all the pizzas he makes follow the international regulations of the Associazione Verace Pizza Napoletana (AVPN). “The thing to remember is: even though we’re having a lot of fun, we’re really serious and passionate about the food,” says director, Chris Lu. Toppings include the lasagna, with organic beef ragu, fior de latte, ricotta, parmesan and basil; and a pizza with nduja, eggplant, fresh buffalo mozzarella, basil and pink peppercorns.
If you’re after something sweet then the Nutella calzone, served with ice cream and glazed strawberries, already has a reputation as a huge crowd pleaser, and there’s fruit frappes, smoothies, shakes and homemade lemonade to wash it all down.
