This winter, the newest place to warm yourself is The Chalet in Darlinghurst. It’s a collaboration between the boys behind The Island (Adam Abrams and Julian Tobias) and The Lobo Plantation Bar (Eddie Levy and Michael Hwang). According to Abrams, they came up with the idea when they were packing up The Island for the season and looking around for a winter equivalent. “Our friends in Switzerland talk about hitting the local chalet after work in winter. We thought we could put our own spin on the après-work theme and offer something that has never been done before in Sydney,” he says.

Taking its cues from chalets in St Moritz, Zermatt and Aspen, The Chalet is built like a winter ski lodge, equipped with a fire pit, two ornamental chairlifts, a snow machine and a window designed to make you feel like you’re in the alps, looking out onto a quaint, French ski village. It’s the perfect spot to cosy up with a glass of mulled wine and toast marshmallows after work. With One Pot Catering handling the menu, and Lobo Plantation on drinks, the menu is full of hearty food and potent cocktails. Favourites include crumbed Camembert balls, Maplewood-smoked brisket burgers, buttermilk chicken wings and a boozy hot chocolate.

Setting up shop in the recently closed Darlinghurst favourite, The Victoria Room, the team is hoping to reenergise the space. The pop-up will run until September, when the long-term concept for the spot will be announced. Abrams remains tight-lipped, but hints that we can expect another after-work concept that has never been done before in an inner-city location. “Hopefully we are starting our own Sydney institution,” he says.
