We’ve been eagerly watching for news of the next Merivale culinary adventure and we now have a countdown, with Mr. Wong set to open on Bridge Lane in the CBD on August 10.
In the latest Dan Hong/Merivale collaboration (Lotus, Ms.G’s, El Loco), executive chef Hong is joined by chef Jowett Yu (Ms.G’s) and head dim sum chef Eric Koh (Hakkasan, London). With their combined culinary expertise, it’s a formidable team in the kitchen, the trio spending a solid six months perfecting a menu based on street food and their individual experiences growing up in Asia.
Spread over two levels in what was once Tank Nightclub (and right next door to Palmer & Co., Mr. Wong is a big operation, accommodating 240 diners and offering traditional and modern takes on Cantonese fare for lunch and dinner, with food service running through until the small hours. The design of the space has 1930s Shanghai elegance with a modern flair – envisioned by Merivale CEO Justin Hemmes and executed by Sibella Court, Bettina Hemmes and Dreamtime Australia.
Suffice to say, we’re pretty excited to see what the team turns out (there’s a promise of abalone steamboat and faux shark fin soup). If previous collaborations are any indication, this will be a new CBD hot spot. We’ll be looking for a seat at the dim sum bar.
