Marrickville Pork Roll, Sydney’s cult-favourite bánh mì vendor has finally unveiled its offspring. Like most hospitality second editions, Marrickville Pork Roll’s new shop comes with more space, more seats (well, more than none) and more options.

The main menu, with the exception of some juice options, reads like a bánh mì encyclopaedia. The pork section has regular pork, barbecue pork, pork meatballs, pork skin and lemon pork. Then there’s the unwritten options, which can be ordered by pointing, prying or simply being in the know. These include sundried pork, salted pork, slow-cooked pork and chargrilled pork skewers. All of them are combined with Marrickville Pork Roll’s signature blend of homemade pate, pickled carrots, radish, shallots, coriander, mayonnaise and its bánh mì special sauce.

The extra pork is just the start of the hidden menu here. “A lot of stuff is not on the menu. It’s just been added on, if you know what I mean. We’re just experimenting,” says Du. Depending what day or time you visit, you might find vermicelli salad, bun kho (home-style beef stew), stir-fried noodles, or something entirely different, all of which will be under $7 for a large container.

In the future, the quaint store (like a lively, but old-school, chicken shop) may make use of its scattering of outside seats for a dinner trade, featuring the home food of Du’s businesses partner and wife, Nga Huynh. “I want to open it longer, but it depends how the business goes, and whether we have the energy and the people to do it,” says Du. The only thing he seems sure about is the bánh mì itself. “Most people just want to eat the rolls. Our name is Marrickville Pork Roll.”

Du says the entire reason he opened the new store was so he could give his customers (he is still humbled by how many he has) fresh bread throughout the day. Unlike the original store, which only had the resources for a single bake each morning, this site will pump out bread throughout the day, so every customer can experience that optimum ratio of crunchy edge to soft middle.
