On a bright corner of Wattle Street in Ultimo is a busy new cafe The Local Mbassy. Soft music from the ‘20s plays and locals enjoy the view across Wentworth Park, tucking into burgers, pancakes and pans of baked eggs and sipping on Campos coffee.

The boiler-room-inspired interior includes details such as exposed-pipe lighting features, antiques and leather bike-pedal stools lining the front counter. Barista and owner Marcus Gorge’s curled moustache is a nice touch.

Head chef Tamer Gorge (of Aria, Quay and Doltone House) works side by side with his brother, Marcus, with a healthy dose of brotherly banter.

Everything in the interior is custom made, with murals and graffiti work by Australian street artist Sid Tapia. “We’re taking off our hats to the local hooligans, the revolutionaries and those who made a difference in moulding today’s Australian art, fashion and coffee culture,” says the cafe’s creative director and designer, Korolos Ibrahim.

The all-day breakfast menu includes the full English, which comes with double-smoked bacon, mushrooms and potato rosti; an open omelette with options of chorizo and Spanish onions or cherry tomatoes and crumbled feta; and the cafe's most talked about menu item, red velvet pancakes.

“My brother’s wife is a red velvet enthusiast.” says Tamar, “and she was adamant we make a red velvet pancake. Mine uses melted chocolate and another secret ingredient.” They come in a tower ascending from deep-red, fluffy pancakes at the bottom to smaller pikelets at the top. It’s served with blueberries, pistachios, whipped cream, strawberries, and drizzled with fresh strawberry and sugar syrup. An intriguing addition of sliced basil scattered on top gives it a refreshing taste.

A range of organic sodas and juices are available to order, along with freshly made smoothies, including the smooth and sweet concoction of cherry, pistachio, goji berry and vanilla blended with ice.
