Sydney’s bar and pub gentrification spree continues, with Bondi institution Ravesis the latest to re-open following a major facelift.

Opening under the name Hotel Ravesis, the bar’s new look references the retro character of other iconic beach precincts found in Cuba, Miami and LA.

“Bondi is a mystical kind of destination – it’s got some form of romance about it,” co-owner Aya Larkin says. “It’s a beachside playground, so we’re wanting to give it a bit of that of relaxed sophistication and relay the history of Bondi with a new freshness.”

Larkin looked to the building’s former Art Deco glory for inspiration, enlisting the help of designer Kristen Doyle from Killanoodle Design, and Sydney stylist Carina Hicks. They’ve refreshed the colour palette, replacing white with flamingo pink, while maintaining the building’s 1914 floor-to-ceiling arched windows and doorways.

Come summer, you’ll want to be cradling a Passionfruit Collins out on the wraparound balcony overlooking the famous breaks. It’s one of a handful of seasonal cocktails rolling out, featuring Tanqueray, fresh lemon, sugar, passionfruit and soda.

And forget the old sports-bar bistro: head chef Peter Streckfuss (Catalina) is hand-rolling pasta and plating it with scallops, morcilla (blood sausage), sea asparagus and a Romesco sauce. Other highlights include kangaroo fillet with grilled fig, watercress and port reduction, and oysters shucked to order.

After-hours, Larkin is the frontman of Aussie alt-funk band Skunkhour, so he’s ensured that Hotel Ravesis’ live-music roster is solid; The Elements – which features members of the Bernard Fanning band, Skunkhour and The Whitlams – has a residency every Wednesday night. DJs will take over the decks on Friday and Saturday nights.

Upstairs, 12 boutique suites and rooms offer arguably some of the best views in town. They’ll also be completely restored by mid-2017 with furniture by MCM House and a colour palette spanning chartreuse to pale blue.
