For the next three months, Daniel Jackson and Corie Sutherland – the brothers behind Edition Coffee Roasters – will serve coffees and pastries to office workers from a hole-in-the-wall on Castlereagh Street. Between installing a coffee cart in Barangaroo, and moving into Edition’s second permanent home on George Street in late July, it’s the perfect interim project.

“It came about because a friend of mine knows the owner of the building,” says Jackson. “He called me and said, ‘Hey, there’s a spot free in the city. If you want to chuck a coffee machine in there, it’s ready to go’.”

Pastries from Textbook Boulangerie Patisserie line the bar. The coffee is, as usual, kept seasonal and made from single-origin beans. Roasted by Sutherland, the bean du jour is a nutty-chocolaty Brazilian for milk coffees, and a punchy yet balanced Costa Rican for black.

When it came time to move into the shell of the pre-existing cafe, Jackson and Sutherland decided to keep it simple. Apart from a few Nordic-Japanese fittings and finishes, it was a no-brainer to foreground the sandstone walls and marble bar top in the heritage-listed building.

Since opening on Anzac Day, the response from well-heeled workers has been overwhelmingly positive. “A lot of them know us from Darlinghurst, they’re familiar with the Edition brand, and they’re just grateful they don’t have to go all the way there to get a good coffee.”

Coffee isn’t all the pop-up will serve in the coming months. “In a couple of weeks’ time, we’re going to share the space, and from five o’clock, Monday to Friday, the space will become something else entirely.” Jackson remains tight-lipped about exactly what that something is, but we can reveal the pop-up will be shared with one of Edition’s old chefs from Darlinghurst.
